stuffed peppers with cheese and veggie beef

STUFFED PEPPERS WITH CHEESE AND VIGGIE BEEF

1 pack. Shredded mozzarella
1 dl grated cheese (half to top with)
3 cloves of garlic
1.5 dl tomato sauce (marinara)
1 tablespoon. chopped parsley, plus more for garnish
Pinch chilli flakes
salt
black pepper
500 grams of ground veggie beef
3-4 peppers, halved and the seeds removed
1 dl vegetable stock
Preheat the oven to 220º. In a large bowl, combine mozzarella, grated cheese, garlic, tomato sauce, parsley and red pepper flakes and season with salt and pepper. Stir until mixed and then gently add the veggie ground beef.
Pour the mixture into halved peppers and sprinkle over the remaining grated cheese.
Pour vegetable stock into the oven dish (to get the peppers cooked) and cover with foil.
Bake until the peppers are soft, 55 minutes to 1 hour. Remove the foil, cover and leave in the oven for 2 minutes.
Garnish with parsley before serving.
