Autumn Harvest Bowl

2 dl arugula

0.5 dl boiled quinoa

1 small sweet potato roasted in the oven

0.5 apple, sliced

9.5 dl rinsed chickpeas

2 tablespoons dried cranberries

2 tbsp goat cheese

for the dressing:

2 tablespoons hummus

1 tablespoon agave syrup

Boil the quinoa according to the instructions on the package and roast the sweet potatoes either in a frying pan or in the oven.

Add the arugula to a bowl and then top it with boiled quinoa, roasted sweet potatoes, apple, chickpeas, cranberries and goat cheese.

Make the dressing: whisk together the hummus and agave syrup until well combined.

Drizzle the dressing over the bowl and enjoy.
